Try their coconut daiquiri, which best showcases this technique. This is where the water content of alcohol is replaced with different flavours from another non-alcoholic liquid - think adding coconut milk to white rum. One, called “switching”, was spearheaded by the owner Iain Mcpherson. Panda & Sons’ cocktail menu is divided into chapters, each showcasing a different, elaborate technique for perfecting their flavours. “It’s one of my all time favourite spots, not just because of the hospitality the second you walk through the wonderful bookcase door, but because of the entire experience, from their incredible cocktails to the new techniques they’re bringing to the bar industry,” Stanley-Whyte explains.
